Twice Baked Cauliflower

  • Twice Baked Cauliflower
  • 1 small head of cauliflower
  • 1/2 cup of sour cream
  • 1 Tbsp of butter
  • 1 cup of cheddar cheese, divided
  • 6 slices of bacon, fried and crumbled, divided
  • 1 1/4 tsp of salt
  • 1/4 tsp of pepper

Preparation

Step 1


Preheat oven to 400. Boil cauliflower till cooked, drain well. Place the cauliflower in a food processor. Add sour cream, cream cheese, butter
half of the cheese, half of bacon, salt and pepper to processor. Process until contents have the smooth consistency of mashed potatoes.
Grease casserole dish and pour in the cauliflower mixture. Top with the remaining cheese and crumbled bacon. Bake uncovered 20 minutes
or until lightly browned on top.
