Potato Pie

Ingredients

  • 5 tsp vege oil
  • 4 onions chopped
  • 2 lbs crumbles
  • 2 lbs black pots
  • 5 tsp salt
  • 4 lbs mashed pots with skin
  • 3 eggs
  • 4 tsp cayenne pep
  • few drops of EVOO
  • pinch of black pep
  • 1 cup milk
  • 1/2 lb butter
  • 1/2 cup chz

Preparation

Step 1

Heat oil on med-hi heat in a large deep skillet. Peel and coarsely chop onions and add to skillet. when translucent-about 5 mins, add crumbles and salt and raise heat to high.
Cook, stirring occasionally until crumbles are brown. Reduce heat to med-low and add cayenne and pep. Stir.
Remove the skillet from heat, add oil and boiled, chopped eggs. Stir well and set aside.
Prepare mashed pots.
On a greased baking sheet-spread 1/2 of mash pots 1/2 in thick. smooth beef mixture on top-1 in layer. Cover with chz and repeat pot layer to seal. Level with fork. Place in 350 oven for 20 mins or pie surface is brown.
