Can also use chocolate pudding in place of the lemon.

Ingredients

  • Crust:
  • 1 cup flour
  • 1 stick melted butter
  • 1 tablespoon sugar
  • 1 cup chopped pecans
  • pinch of salt
  • Filling:
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup cool whip
  • 2 small packages instant lemon pudding
  • 2.5 cups milk
  • 2 tablespoons lemon juice
  • additional cool whip (1-2 cups)
  • Shredded coconut - about 1/3 cup

Preparation

Step 1

Cmbine the "crust" ingredients and press on the bottom of a greased 9x13-inch pan. Bake at 350 degrees for 13-15 minutes until lightly browned. Let cool.

Combine the cream cheese and powdered sugar, then stir in 1 cup of the whipped topping and spread over crust.

Then combine the milk, lemon juice and the 2 packages pudding. Spread over the cream cheese mixture.

Cover with the remaining whipped topping. Sprinkle with coconut (toasted, if you like). Cover and refrigerate, serve cold. Keep refrigerated.
