Asian Noodle Salad (with pork or chicken)

3 points for pasta mixture
3 points for 2 oz lean pork
2 points for 2 oz chicken breast
2 points for 1/4 pkg broken ramen noodles (doesn't add to taste only gives it "crunch"))

Ingredients

  • 6 oz rotini, cooked and drained
  • 4 oz broccoli or snow peas (add during last 2 min. of pasta cooking
  • 1/2 C thin-sliced carrots
  • 8 oz cooked chicken or pork
  • 1/4 C red onion chopped
  • 1/4 C white wine, rice, or tarragon vinegar
  • 1 1/2 T sugar
  • 1 tsp sesame oil
  • 1 3 oz pkg ramen soup - chicken or pork
  • 1 T sesame seeds

Preparation

Step 1

- Combine vinegar, sugar, oil, and seasoning from soup packet
- Mix with all other ingredients except sesame seeds; refrigerate or serve immediately
- Before serving sprinkle with sesame seeds and broken up ramen noodles (May omit noodles and use sunflower seeds as a garnish)
