Pumpkin Roll

Easy to make for the holidays...

Ingredients

• Cream together:
• 3 eggs
• 2/3 C pumpkin
• 1 C granulated sugar
• 3/4 C flour
• 1 t baking soda
• 1/2 t cinnamon
• __________________________
• 1 C chopped walnuts or pecans
• __________________________
• 1/2 C powdered sugar
• __________________________
• 8 oz cream cheese
• 2 T butter
• 1 C powdered sugar
• 1 t vanilla

Preparation

Step 1

Cream together the first six ingredients. Pour cake mixture on greased wax paper on jelly roll pan. Sprinkle with 1 C chopped walnuts or pecans.
Bake in preheated 375 degree oven for 15 minutes.

Turn cake on clean towel covered with 1/2 C powdered sugar. Remove wax paper, roll up and let cool.

Unroll and spread with mixture of cream cheese, butter, powdered sugar and vanilla. Roll and chill for 2 hrs or more.
