Warm Potato Salad w/ Beer Dressing

Ingredients

  • dressing:
  • 2 1/2 lbs. red potatoes
  • 1/2 c. finely chopped mild red & yellow onions
  • 1/4 c. finely chopped parsley
  • 2 tbsp. chopped chives
  • 6 tbsp. olive oil
  • 1/2 c. fine chopped onion
  • 3/4 c. Sam Adams or Lager beer
  • 3 tbsp. malt or cider vinegar
  • 1 tbsp. dijon mustard
  • 1/2 tsp. sugar
  • 1/2 tsp. each s&p

Preparation

Step 1

Cook potatoes in boiling salted water till soft, about 20-25 mins. Remove, slice into 1/4" pcs. While still warm, gently mix w/ onions, parsley, & dressing. Taste, s&p as needed. Garnish w/ chopped chives

Dressing: heat 2 tsp. olive oil in small frying pan over med. heat. Add onions, cook till just soft, about 5 mins. Add beer, vinegar, sugar, and boil 5 mins. Put into food processor w/ mustard. While running, pour slowly remaining 4 tbsp. olive oil. Taste, s&p as needed. Makes 1 c. (for 2 1/2 lbs. pot)
