Corn and Bean Roll-ups

  • 1 16oz bad of shredded cole slaw mix
  • 1 cup frozen whole corn
  • 1 cup shredded carrots
  • 2 Tbsp chili sauce
  • 2 16oz can of pinto beans, rinsed and drained
  • 2/3 cup mayo
  • Tortillas

Preparation

Step 1

Heat skillet over med heat with cooking spray. Add slaw and cook covered for 4 mins, stir and cook 1-2 more mins until softened. Stir in corn, carrots and chili sauce. Cook, stirring constantly, until softened about 5 mins. Add pintos, cook and stir 4 mins. Remove form heat and add mayo. Spoon mixture down tortilla. Roll tightly and serve.
