Fusilli with Spinach-Nut Pesto

  • 1 # Fusilli
  • 3/4 Cup salted roasted mixed nuts
  • 1 clove garlic chopped
  • 8 oz Spinach, stems removed
  • zest and juice of one lemon
  • pepper
  • 1 Cup grape tomatoes, halved

Preparation

Step 1

Cook pasta. Pulse nuts andd garlic in food processor. Add spinach and lemon zest and juice. Add olive oil, salt and pepper to taste. Add pesto and tomatoes to pasta.
