Whole Baby Snapper and Green Sauce

Ingredients

  • 3 whole baby snapper, cleaned
  • 1/2 tsp pepper fresh, divided
  • 1/4 tsp salt
  • 1 lemon cut into slices
  • cooking spray
  • 1 cup fresh parsley
  • 2/3 cup fresh mint
  • 1/4 cup fresh dill
  • 1/4 cup fresh basi
  • 3 TBSP EVOO
  • 2 TBSP capers
  • 4 anchovy fillets
  • 3 garlic cloves peeled

Preparation

Step 1

Grill to med-high heat.
Score snapper with crosswise cuts on each side of skin. Sprinkle 1/4 tsp pepper and salt evenly inside cavities, arrange lemon slices in cavities. Wrap with foil coated in cooking spray. Place on grill, grill 15 mins, turning once. Let stand 5 mins.

Combine parsley and remaining ingredients in food processor, stir in pepper. Serve.
