Pesto, Corn, and Fresh Pea Pasta with Tomato Summer Salad

Ingredients

  • 1 lb whole wheat penne pasta
  • (3 T pesto)
  • 3 ears fresh corn, removed from cob
  • 2 c fresh peas
  • (Salt and pepper to taste)
  • (2 T olive oil)
  • 3 tomatoes, thinly sliced
  • 1 yellow onion, thinly sliced
  • (1 c white vinegar)
  • (Salt and pepper to taste)

Preparation

Step 1

Cook pasta according to package directions. Toss
with pesto, corn, peas, salt, pepper, and olive oil.
Combine tomatoes, onion, vinegar, salt, and
pepper. Let sit for at least 30 minutes.
