Ingredients
- 1 lb whole wheat penne pasta
- (3 T pesto)
- 3 ears fresh corn, removed from cob
- 2 c fresh peas
- (Salt and pepper to taste)
- (2 T olive oil)
- 3 tomatoes, thinly sliced
- 1 yellow onion, thinly sliced
- (1 c white vinegar)
- (Salt and pepper to taste)
Preparation
Step 1
Cook pasta according to package directions. Toss
with pesto, corn, peas, salt, pepper, and olive oil.
Combine tomatoes, onion, vinegar, salt, and
pepper. Let sit for at least 30 minutes.
