Ingredients
- 1/2 cup plus 6 Tbsp. butter, softened
- 2/3 cup granulated sugar
- 1 cup packed brown sugar
- 1 egg
- 1/2 Tbsp. vanilla extract
- 2 tsp. orange zest, finely chopped
- 1/2 tsp. salt
- 3/4 tsp, baking soda
- 2 cups all-purpose flour
- 1 cup quick-cooking oats
- 3/4 cup sweetened coconut
- 1 1/2 cups dried cranberries or whole
- fresh cranberries
- 1 1/2 cups chocolate chunks (use a
- mixture of dark, white, and milk
- chocolate)
Preparation
Step 1
In a medium mixing bowl cream butter and sugars for 2 to 3 minutes. Beat in egg and vanilla extract. Add orange zest. Stir in salt, baking soda; and flour until combined. Fold in oats, coconut, cranberries, and chocolate chunks. Drop dough by teaspoonfuls 2 inches apart on a parchment-lined baking sheet. Bake in a 375° oven for 8 to 10 minutes. Transfer cookies to a wire rack. When cool, store in a tightly covered container. Makes about 48 cookies.
