Ingredients
- 1 1/2 pounds carrots ( 7-8 medium)
- 1 cup fresh orange juice
- 2 teaspoons coarse salt
- 1/4 teaspoon ground pepper
- 2 tablespoons chopped cilantro
Preparation
Step 1
1. Peel 1 1/2 pounds carrots ( 7-8 medium); cut into 2 inch lengths. Halve or quarter pieces lengthwise so all are the same thickness.
2. Place carrots in a large skillet with 1 cup fresh orange juice, 2 teaspoons coarse salt, and 1/4 teaspoon ground pepper. Bring to a boil; reduce to a simmer. Cover; cook over medium heat. Tossing occasionally, until carrots are tender, 6-8 minutes.
3. Uncover; cook until liquid is reduced to a glaze; 2-3 minutes more. Mix in 2 tablespoons chopped fresh cilantro; serve immediately.
