BAKED FISH FILLETS WITH SESAME SEEDS

  • RIND OF ONE LEMON, ZESTED
  • 2 TBSP SESAME SEEDS 1 TBSP PEELED MINCED GINGERROOT
  • 1/2 CUP (1 STICK) BUTTER
  • 3 TBSP FRESH LEMON JUICE
  • 1 TSP SESAME OIL
  • 1 TSP DIJON MUSTARD
  • 1/2 TSP SOY SAUCE
  • 1/2 TSP CAYENNE PEPPER
  • 1 LB FILLETS – BLUE FISH, FLOUNDER, TILAPIA
  • 4 SCALLIONS, SLICED THIN ON THE DIAGONAL

Preparation

Step 1

TOAST SESAME SEEDS UNTI GOLDEN BROWN.

IN A SKILLET, COOK GINGER IN 2 TBSP BUTTER STIRRING UNTIL GOLDEN.

ADD REMAINING BUTTER (CUT INTO BITS) AND LEMON JUICE, STIRRING UNTIL BUTTER MELTS.

STIR IN SESAME OIL, MUSTARD, SOY SAUCE, CAYENNE, S&P. REMOVE FROM HEAT.

PAT FISH DRY AND ARRANGE SKIN SIDE DOWN IN A BUTTERED BAKING DISH IN ONE LAYER.

POUR SAUCE, SPRINKLE LEMON ZEST AND SCALLIONS ON TOP.

BAKE, COVERED IN 425 OVEN FOR 8-10 MINUTES.

REMOVE FROM OVEN, SPRINKLE WITH SESAME SEEDS. (SERVE OVER RICE.)
