SMOKED SALMON CONES

Ingredients

  • 1/2 cup ricotta cheese (about 100 g)
  • 1/3 cup goat cheese (about 75 g)
  • 100 g smoked salmon, finely chopped
  • 20 mini ice cream cones
  • Finely chopped parsley or chives to garnish

Preparation

Step 1

1. Mix together the ricotta and goat cheese. Stir in the salmon. This filling can be made and chilled up to 1 day ahead.
2. To assemble the cones, spoon about 1 tablespoon of filling into each mini cone. Sprinkle the tops with chopped parsley or chives. Serve immediately. Makes 20 cones.
