Step 1
For crust mix 2 c graham cracker crumbs, 3 tbsp brown sugar, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg 1/16 tsp salt and 6 tbsp melted butter. Mix and press into 9 in glass pie plate, refrigerate 15 minutes. Then preheat oven to 350 and combine 4 large room temperature egg yolks with zest of 1 lime, beat for about 8 minutes, the yolks should be a pale yellow and fluffy. Then gradually add one (14 oz) can sweetened condensed milk and beat 7 minutes or until fluffy. Then add 1/4 c fresh sqeezed lime juice and beat about 2 mintues. Then pour into pie shell and back about 12 minutes. Top with whipped cream. WE TRIED THIS 5/12, IT WAS GOOD BUT QUITE THIN, PROBABLY CUZZ YOLKS NOT ROOM TEMPERATURE.
