STRAWBERRY CRISP WITH PINE NUT TOPPING

Ingredients

  • 6 cups quartered strawberries (~2boxes)
  • Juice of 1/2 lemon
  • 1 TBL sugar
  • 2 tsp cornstarch
  • 2/3 cup brown sugar
  • 5 TBL cold butter
  • 1/2 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup pine nuts
  • 1/2 tsp cinnamon
  • dash of salt
  • (1/2 tsp almond extract – optional)

Preparation

Step 1

Toss strawberries, lemon juice, sugar and cornstarch together .

Spread in an 8x8 or 9x9 lightly greased pan.

Combine brown sugar, butter ( cut into pieces), oats, flour, pine nuts, cinnamon, salt , and almond extract n a food processor; pulse a few times until combined.

Crumble over fruit.

Bake at 375 for 40 –45 minutes.

Serve warm or at room temp . with vanilla ice cream.
