Corn and Blueberry Pancakes

Ingredients

  • 3/4 c. flour
  • 3/4 c. cornmeal
  • 1/4 c. sugar
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 c. buttermilk
  • 1 egg
  • 1 tbsp. vegetable oil
  • 1 c. fresh or frozen blueberries

Preparation

Step 1

Whisk dry ingredients together then make a well in the center.

Whisk buttermilk, egg and oil in a separate bowl then add to flour mixture. Whisk until moistened. Fold in blueberries

Drop by 1/3 c. onto griddle heated over med/low heat and cook.
