Pumpkin Pie from Fresh Pumpkin

This pie tastes so much better than the ones from canned pumpkin... Try and get a pumpkin that is bred especially for pies... Ask your local fruit and vegetable stands....

Ingredients

  • 4 C pumpkin
  • 3 t nutmeg
  • 1 t clove
  • 2 t cinnamon
  • 4 C Canned Milk (1 Qt or 32 oz)
  • 6 Eggs
  • 2 C sugar
  • Unbaked pie shells (2)

Preparation

Step 1

Cut the pumpkin into long strips. Remove inside seeds and save for baking or discard. Take off rind. Microwave or bake till soft. Make sure that you add water and cover while microwaving or baking the pumpkin strips. Drain well preferable through cheesecloth to get all moisture out.

Mix all ingredients. Bake @ 350 degrees for 1 Hr or till knife or toothpick comes out clean. Note: Mine always takes closer to 1 1/2 hours. I make the deep dish pies.
