Ingredients
- 1 pound broccoli rabe, stems trimmed, cut into 2-inch pieces
- 3 tablespoons olive oil
- 1 cup uncooked quinoa
- 1/2 cup raisins
- 1 12 ounce package fully cooked chicken-apple sausages
- 1 sweet onion, chopped
- 2 cloves garlic, minced
- 1/2 cup sliced almonds, toasted
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
Preparation
Step 1
1. Bring a large pot of lightly salted water to a boil. Add broccoli rabe and cook until tender, about 3 minutes. Drain and set aside.
2. Meanwhile, bring 2 cups water and 1 tablespoon of the olive oil to a boil in a lidded, medium-size pot. Stir in quinoa and raisins. Turn down to a simmer and cover. Cook 20 minutes or until all liquid is absorbed.
3. Heat 1 tablespoon of the olive oil in a large, lidded saute pan on medium heat. Add sausages and cook 5 to 7 minutes, turning to brown all sides. Remove sausages to rest.
4. To same pan, add remaining 1 tablespoon olive oil. Saute onion 3 to 5 minutes or until softened. Add garlic and broccoli rabe and saute 3 minutes. Meanwhile, slice sausage on the bias; add to pan along with quinoa mixture, almonds, salt and pepper. Stir to combine and cover. Cook 2 minutes or until heated through.
