PIZZA WITH SAUSAGE AND BROCCOLI RABE

Ingredients

  • 2 tablespoons olive oil
  • 8 ounces Italian pork sausage, casings removed
  • 2 garlic cloves, thinly sliced
  • 8 ounces broccoli rabe, cut into I-inch pieces
  • Pinch of crushed red pepper
  • Kosher or coarse salt
  • 1 tablespoon water
  • 4 ounces mild pecorino, such as Cacio di Roma, or mozzarella, thinly sliced
  • 2 balls (1/2 recipe) Pizza Dough

Preparation

Step 1

Heat the oil in a large skillet over medium heat. Add the sausage and garlic. Cook, stirring and breaking up the lumps, until the sausage is lightly browned. Add the broccoli rabe, pepper, salt and water Cover and lower the heat. Cook until the sausage and greens are tender, 5 to 10 minutes. Let cool. Tear the cheese into small pieces and scatter it over each circle of Pizza Dough. Spread half the sausage and broccoli rabe over each pizza. Immediately slide the pizza onto the baking stone. Bake (one at a time) 6 to 7 minutes or until the edges are puffed and the crust is crisp and golden brown. Makes two 9-10-inch pizzas.
