TWICE BAKED ROASTED GARLIC POTATO

Ingredients

  • 1 Idaho Potato (6-8 inches)
  • 6 roasted garlic cloves
  • 2 T. garlic butter
  • 1/4 cup heavy cream
  • 1/2 oz. Asiago Cheese
  • 1/2 oz olive oil
  • Pinch of salt
  • Pinch of pepper

Preparation

Step 1

Preheat oven to 350°F. Coat potato with oil, salt and pepper. Bake in oven for 35 to 45 minutes until soft on the outside.
Scoop out middle and mix with roasted garlic cloves, garlic butter, cream and cheese. Place mixture back in potato skin and bake in oven for 2 minutes.
To make roasted garlic cloves: Heat oil on burner until it begins to boil. Add garlic and stir quickly until garlic becomes golden brown. Remove from heat. Strain garlic and reserve oil for another use.
