Warm Macaroni & Mozarella Salad

Ingredients

  • 4 T olive oil
  • 4 t red wine vinegar
  • 4 t freshly squeezed lemon juice
  • Salt and black pepper
  • 16 ozs macaroni
  • 1 cup chopped fresh basil
  • 2 T fresh parsley
  • 8 oz fresh mozzarella (small balls or cubes)

Preparation

Step 1

In a bowl wisk together oil, vinegar, lemon, salt and pepper. Cook macaroni and drain. Add basil and parsely and half of dressing. Stir to combine. Let sit and cool for a minute to so. Then, add mozzarella cheese and rest of dressing. (I have also substitued several different kinds of premade Italian Salad Dressing.)
