Antipasto Pasta

Easy to prepare antipasto pasta salad can be served warm or chilled. Add different vegetables, meats or cheeses to switch it up a bit. Perfect as a side dish, or a light summer supper.

Ingredients

  • 12 ounces cooked and cooled bowtie pasta
  • 1 (12-ounce) jar marinated artichoke hearts
  • 3 roasted red peppers, thinly sliced
  • 1/2 cup cubed salami
  • 8 bocconcini (mini mozzarella balls), quartered
  • 1/3 cup pitted kalamata olives, halved

Preparation

Step 1

In large bowl, toss pasta and artichoke hearts (plus liquid from jar) with red peppers, salami, cheese and olives; season.

Serve warm or cold.

Serves 6.
