Ingredients

  • 2 CUPS ALL PURPOSE FLOUR
  • 2 TSP GROUND CINNAMON
  • 1 TSP BAKING SODA
  • 1/4 TSP BAKING POWDER
  • 1/4 TSP SALT
  • 2 CUPS SUGAR
  • 3/4 CUP VEGETABLE OIL
  • 3 LARGE EGGS
  • 1 TSP VANILLA
  • 1 1/2 CUPS GRATED ZUCCHINI
  • 1 1/2 CUPS GRATED PEELED SWEET POTATO
  • 1 CUP CHOPPED WALNUTS

Preparation

Step 1

PREHEAT OVEN TO 350. BUTTER AND FLOUR 9X5X3 INCH LOAF PAN OR MINI-LOAFS. SIFT FIRST 5 INGREDIENTS INTO MEDIUM BOWL. IN LARGE BOWL BEAT SUGAR, OIL, EGGS, VANILLA TO BLEND. MIX IN ZUCCHINI & SWEET POTATO. ADD DRY INGREDIENTS AND WALNUTS, STIR WELL. PUT IN PAN. BAKE UNTIL TESTER INSERTED INTO CENTER COMES OUT CLEAN. BAKE 1 HOUR, 20 MINUTES. COOL BREAD IN PAN ON RACK FOR 15 MINUTES. CUT AROUND THE BREAD TO LOOSEN. TURN ONTO RACK AND COOL COMPETELY.
