Ingredients
- 1 c. orzo
- 1 tomato, chopped
- 3 scallions, chopped
- 1/4 c. chopped cucumber
- 1/4 c. chopped flat-leaf parsely
- 1/4 c. chopped cilantro
- 1/4 c. chopped mint
- 1 lemon, juiced
- 3 Tbsp. olive oil
- salt, pepper to taste
Preparation
Step 1
Bring 4 cups water to a boil. Add orzo and cook 8 to 10 minutes. Drain and cool.
Add tomato, scallions, cucumber, parsley, cilantro, mint and orzo in a serving bowl.
Mix lemon juice, olive oil, salt and pepper. Pour over the orzo mixture. Serve.
