Squash Casserole

  • 1 small onion
  • 3 small summer squash
  • 3 small zucchini
  • 2 T butter
  • 1 egg, blended
  • bread crumbs
  • cheddar cheese, shredded

Preparation

Step 1

Wash and dice squash and zucchini. Steam vegetables, along with onion, in microwave until tender. Mash vegetables and drain reserving juices for soup stock. Salt and pepper to taste, add butter and mix well. Pour into baking dish sprayed with nonstick coating. Sprinkle with bread crumbs and bake for 30 minutes at 375oF. Sprinkle with shredded cheddar cheese and bake until melted.
