Eric's Pumpkin Protein Pancakes

Batter can also be used to make waffles.

Ingredients

  • 5 oz pumpkin puree
  • 1 scoop 100% whey protein
  • 3 eggs
  • 1/4 cup chopped pecans or walnuts
  • 1/2 t. baking soda
  • 1 T. pumpkin pie spice
  • 1 T. almond or coconut flour (optional if want to make batter thicker)

Preparation

Step 1

In a large bowl mix all ingredients until smooth. Cook in a pre-sprayed skillet on medium high temperature until bubbles form on the surface. Turn the pancake over and cook until dark golden brown.

Serve with honey, agave nectar, or 100% maple syrup. (I eat mine plain.)
