Noodle Kugel

Ingredients

  • Kugel:
  • 3/4 pound wide egg noodles
  • 4 large eggs
  • 3/4 cup sugar
  • 1/2 pound cream cheese, at room temperature
  • 2 cups cottage cheese
  • 1 cup sour cream
  • 1/2 stick (4 tablespoons) unsalted butter, melted
  • 1 teaspoon vanilla
  • 2 apples, such as Golden Delicious, Gala or Pink Lady, peeled, cored, finely chopped
  • Grated zest of 1 orange
  • Topping:
  • 1 cup panko or other dried coarse breadcrumbs
  • 1/2 stick unsalted butter
  • 1/3 cup packed brown sugar
  • 1/4 tsp ground cinnamon

Preparation

Step 1

1. Heat the oven to 350 degrees. For the kugel, heat a large pot of salted water to a boil' cook the noodles until al dente, about 6 minutes. Drain; set aside.

2. Beat the eggs in a large bowl with an electric mixer on medium speed, or whisk until well blended. Beat in the sugar. Add the cream cheese, cottage cheese, sour cream, butter and vanilla' whisk until the cream cheese is completely blended. Stir in the apples and orange zest; mix to blend. Stir in the drained noodles' spoon into a 9 x 13 inch buttered baking dish.

3. For the topping, combine the panko, butter, brown sugar and cinnamon in a small bowl; mix with a fork. Scatter evenly over the noodles. Bake until the kugel is set, 1 hour. Let rest, 15 minutes; cut into squares and serve.
