Rhubarb Loaf

Ingredients

  • 2 1/2 cups white flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 cup buttermilk/sour milk
  • 1 tsp vanilla
  • 2 cups chopped rhubarb
  • TOPPING
  • 1/2 cup packed brown sugar
  • 1 tbsp melted butter
  • 1/2 tsp cinnamon

Preparation

Step 1

In a large mixing bowl, combine flour, baking soda, salt.
In another large bowl, blend sugar with oil.
Whisk in egg, buttermilk and vannilla.
Stir liquid mixture into flour mixture with rhubarb, until flour is just incorporated.
Spoon into 2 greased 8x4 loaf pans.
Topping
Combine all ingredients and sprinkle over batter in loaf pans.
Bake at 350 for 40-45 minutes.
Let cool in pans for 10 minuted before removing from pan.
