Dark chocolate and bacon cupcakes

Ingredients

  • 12 slices bacon
  • 2 c flour
  • 3/4 c plus 1t unsweetened cocoa powder
  • 2 c white sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 2 eggs
  • 1 c strong brewed coffee
  • 1 c buttermilk
  • 1/2 c vegetable oil

Preparation

Step 1

1)preheat oven to 375 and line 12 muffin tins with cupcake liners. place bacon in large skillet and cook til evenly browned.. drain

2) in large bowl stir together flour, 3/4 c of cocoa powder, sugar, baking powder, baking soda and salt. make a well in centre and pour in eggs, coffee, buttermilk and oil. stir til just blended. mix in 3/4 of the bacon. spoon into cups evenly

3) bake in preheated oven til tops spring back, about 20-25 minutes. cool pan on wire rack. when cooled, top with favorite chocolate frosting and sprinkle with reserved bacon. dust with remaining cocoa powder.
