MANHATTAN CLAM CHOWDER

Ingredients

  • 1/4 cup butter
  • 1/4 cup chopped onions
  • 1/4 cup chopped celery
  • 1/2 tsp. garlic powder
  • 1 tsp salt
  • 1 tsp white pepper
  • 1 tsp celery seed
  • 1/2 cup water
  • 4 med. carrots diced small
  • 3/4 cup chopped clams cooked or raw
  • 32 oz. canned clam juice
  • 3/4 cup whole tomatoes crushed
  • 1 1/2 cup tomato sauce
  • 2 large potatoes diced small

Preparation

Step 1

Saute the onion, celery and spices in the butter in a soup pot. Add the water and simmer until the celery is almost fully cooked but still firm.

Add tomato sauce, crushed tomatoes, carrots, clam juice & clams.

Simmer until the carrots are cooked through. Add potatoes and let simmer for ten minutes.

(I used alot more clams and vegetables than it called for...I like it hearty!)
