Ingredients
- 2 oz sliced cured chorizo
- 1 small chopped onion
- 8 large eggs
- Salt
- Pepper
- Chopped chives
- Roasted potatoes
Preparation
Step 1
1. Cook chorizo & onion in a large nonstick skillet over med heat until onion is soft, 5-6 min.
2. Beat eggs w/salt & pepper, add to skillet, & cook, stirring, until cooked but still soft, 2-3 min.
3. Sprinkle w/ chives & serve w/ potatoes.
