Ingredients
- 2 lbs new potatoes, halved
- 1 lemon, thinly sliced
- 2 T EVOO
- Kosher salt & black pepper
- 2 T coarsely chopped fresh dill
Preparation
Step 1
1. Heat oven to 450°F. On a rimmed baking sheet, toss the potatoes & lemon w/the oil, 3/4t salt, & 1/4t pepper.
2. Roast, tossing once, until tender, 25-35 min. Toss w/dill before serving.
