Roasted Beef Tenderloin with Basil-Curry Mayonnaise

Ingredients

  • Beef
  • Cooking spray
  • 2 teaspoon Cumin seeds
  • 2 teaspoon Coriander seeds
  • 3 garlic cloves
  • 1/4 teaspoon Kosher salt, plus 2 teaspoons
  • 1 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 1 (3-4 lb) beef tenderloin, trimmed
  • Mayonnaise
  • 1 cup mayonnaise
  • 1/4 cup Mascarpone cheese at room temperature
  • 1/3 cup finly chopped basil leaves
  • 1 tablespoon curry powder
  • 1 teaspoon smoked paprika
  • kosher salt and pepper

Preparation

Step 1

Beef
1. Preheat oven to 400F.
2. Spray heavy baking sheet with cooking spray
3. Finely grind cumin and coriander seeds. Heat small skillet over medium heat and cook spices (dry) for a few seconds until aromatic and toasted. Put spices in a small bowl.
4. Chop garlic on cutting board. Sprinkle with salt and mash together with knife to form paste. Add the garlic paste to the spices. Add remaining salt, pepper and oil and stir until smooth.
5. Rub meat with spice mixture and place onto baking dish.
6. Roast 35-40 minutes or until thermometer reads 125F for Medium Rare.
7. Place meat onto a cutting board; cover meat with foil for 20 minutes before carving.

Mayonnaise
1. In a small bowl whisk together the mayonnaise, mascarpone cheese, basil, curry powder and paprika until smooth.
2. Season with salt and pepper to taste


To serve: slice meat ¼ inch thick and serve with Mayonnaise on the side.
