Key Lime Pie - a bit lighter

Really a great alternative to original key lime pie

Ingredients

  • Crust
  • 1 c. graham cracker crumbs
  • 1 T. brown sugar
  • 1/2 t. salt
  • 1 oz. premium white chocolate, grated or finely chopped
  • 2 T. butter, melted
  • 1 T. canola oil
  • Cooking Spray
  • Filling
  • 1/2 cup plain 2% reduced fat greek yogurt
  • 1/2 cup Key Lime juice or fresh lime juice
  • 1/2 t. lime rind
  • 3 large egg yolks
  • 1 (14 oz.) can fat-free sweetened condensed milk
  • 3/4 cup Cool Whip

Preparation

Step 1

Preheat oven to 350'
To prepare crust - combine crumbs, sugar, salt and chocolate in a bowl and blend well. Add butter and oil, toss with fork until moist. Press crumb mixture into 9 inch pie plate coated with cooking spray. Bake for 8-10 minutes. Cool completely on wire rack
Place yogurt and next 4 ingredients in a bowl. Beat with a mixer at medium speed for 2 minutes. Bake at 350' for 14 minutes or until set. Cool completely, chill at least two hours and serve with Cool Whip
