Pepper Jack Bacon Macaroni and Cheese

Ingredients

  • 12 ounce elbow macaroni
  • 10 slices of bacon cooked and crumbled reserve 1 tbsp bacon grease.
  • 2 tbsp butter
  • 1/2 onion diced
  • 1/2 cup bell pepper
  • 1 jalapeno seeded and diced
  • 2 tbsp minced garlic
  • 3 tbsp flour
  • 1/2 cup half and half
  • 3/4 cup chicken broth
  • 8 ounce shredded pepper Jack cheese
  • 4 ounce cream cheese
  • Salt and Pepper

Preparation

Step 1

Cook macaroni until al dente. Place butter and bacon grease in a larage pan. Saute onions, bell pepper and jalapenos for 3-4 minutes. Add garlic. Whisk in flour and stir. Whisk in Half and Half, chicken broth and cream cheese. Top with more cheese and bacon.

Bake 350 for 25 minutes
