Ingredients
- 1 lb Italian sausage, casing removed
- 2 large cloves garlic, minced
- 1 cup chopped mint
- 1 14oz can stewed tomatoes, pureed
- 1 8oz can tomato sauce
- 1 cup water
- salt and pepper to taste
- 1 lb Penne Pasta
Preparation
Step 1
In a large skillet, cook sausage,garlic and mint until sausage is browned. Drain off grease. Stir in tomatoes, tomato sauce, water, salt and pepper. Using a hand blender process until sausage is coarsely ground, do not over process. cook over medium heat for 1&1/2 hours or until sauce thickens.
serve over Penne Pasta with freshly grated Parmesan cheese
I also like to hollow out zucchini squash,fill squash with meat filling and bake for 30 minutes at 350. Top with cheese
