Ingredients
- Peel & cut 4 beets and 3 ripe pears into fine matchsticks.
Preparation
Step 1
Dress in Lemon oil dressing (juice of 1 lemon, + 10 Tbsp. EVOO) makes about ¾ cup dressing – use just a bit. Season w/sea salt & freshly ground black pepper.
Crumble 7 oz feta cheese on top. Sprinkle w/small mint leaves.
