Key Lime Pie Ice Cream *****

With chunks of graham cracker crust, and tart lime ice cream,it's perfect. The first time I made this was at the lake for July 4th, 2009.

Ingredients
- Graham Cracker Chunks:
- 4 large eggs
- 3/4 cup sugar
- 1/4 ts salt
- 2 1/4 cups heavy cream
- 3/4 cup milk
- Ice water
- 3 T key lime juice (Nellie & Joe's)
- I've also used lime syrup
- 3/4 cup graham cracker crumbs
- 2 T sugar
- 2 T butter(melted)
Preparation
Step 1
1. In a medium bowl, whisk together the egg yolks, 1/4 cup sugar and the salt. In a medium saucepan, whisk the cream, milk and remaining 1/2 cup sugar over medium heat until just beginning to simmer, about 5 minutes. Add to the egg mixture in a slow stream, whisking constantly, then pour into the saucepan. Cook over medium low heat, stirring constantly; until the custard thickens and registers 175* on a candy themometer, about 8 minutes.
2. Strain the custard into a bowl set in an ice water bath; stir in the key lime juice. Let cool, then cover and refrigerate for at least 4 hours.
3. Mix together the crumbs, sugar and melted butter. Press firmly onto plate and place in freezer to firm up.
3. Freeze chilled mixture in ice cream machine.
4. Break graham cracker mixture into chunks and fold into frozen ice cream.
Transfer to airtight container and freeze until firm, about 4 hours.
