Rainbow Lettuce Wraps

Ingredients

  • 1 lb (500g) lean ground turkey or chicken
  • 1 tbsp grated ginger root
  • 2 tsp canola oil
  • 3/4 c finely chopped red pepper
  • 3/4 c finely chopped yellow pepper
  • 1/2 c finely chopped onion
  • 2 cloves garlic, minced
  • 1 can sliced water chestnuts, drained and chopped
  • 1/4 c hosin sauce
  • 3/4 tsp chinese 5 spice powder
  • 1/4 to 1/2 tsp hot pepper flakes
  • 1/2 c shredded carrot
  • 1 head Bibb or Boston lettuce, leaves separated

Preparation

Step 1

In a large nonstick skillet, over medium heat, brown turker and ginger, breaking up turkey with a spoon, for 5 to 6 minutes or until no longer pink. Transfer to a bowl and set aside.
In same skillet, heat oil over medium heat. Saute red and yellow pepper and onion for 4-5 minutes or until veggies are softened.
Add garlic and saute for 30 secs. Return turkey to skillet and stir in water chestnuts, hoisin sauce, 1/4 c water, five-spice powder and hot pepper flakes to taste, cook, stirring often, 3-4 mins., or until heated through, transfer to a serving bowl.
Arrange carrot and lettuce leaves on a large platter and set out with turkey mixture, then carrot. Wrap lettuce to enclose filling.
