Ingredients
- RELISH:
- 2 tablespoons balsamic vinegar
- 2 tablespoons orange juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/2 teaspoon grated orange peel
- 1/2 teaspoon red pepper flakes
- 2 cups strawberries, sliced
- 3 tablespoons walnuts, chopped
- FISH:
- 2 pounds tilapia fillets
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 2 tablespoons chili powder
Preparation
Step 1
RELISH: Combine first 6 ingredients and whisk to blend thoroughly. Add strawberries and walnuts and toss.
FISH: Spray grill rack with non-stick coating. Rinse tilapia with cold water and pat dry with paper towels. Combine spices and sprinkle on both sides of fillets. Place on heated grill 4 to 5 inches from hot fire.
Cook 4-5 minutes per 1/2 inch measured at thickest point. Turn halfway through cooking time. Serve covered with relish.
