Egg in a Hole with Smoked Salmon

Ingredients

  • 2 slices of country bread
  • 1 T butter
  • 2 lg eggs
  • Creme fraiche
  • Smoked salmon
  • Capers
  • Red onion
  • Black pepper

Preparation

Step 1

1. Cut a 3" hole in the center of each slice of bread.
2. Melt butter in a lg nonstick skillet over med heat.
3. Place bread in skillet, crack 1 lg egg into the center of each, & cook until the bread is golden & the whites are set, 1-2 min per side.
4. Top w/creme fraiche, smoked salmon, capers, & sliced red onion; season w/pepper.
