Ingredients
- 1 c. cornmeal
- 1 c. flour
- 1/2 c. brown sugar
- 1 Tb baking powder
- 1/3 c. butter
- 1/2 c. low fat milk
- 1 tsp vanilla
- 3 c. blueberries
- 2 c. fresh corn kernels
- 1/3 c. sugar
Preparation
Step 1
Preheat oven to 400.
Butter deep 2-QT baking dish.
Combine cornmeal, flour, brown sugar and baking powder. Cut in butter with pastry knife; until resembles coarse bread crumbs. Stir in milk and vanilla until just moistened.
Mix blueberries and corn in baking dish, sprinkle with sugar. Drop batter on top of mixture.
Bake 35 mins
