Ingredients
- 2 cups thinly slcied pickling cucumbers
- 1 cup thinly sliced Vidalia onion
- 1/4 cup cider vinegar
- 1/4 cup sugar
- 1/2 tsp Mustard seeds
- 1/2 tsp salt
- 4 garlic cloves, minced
- 2 whole dried red chiles
- 16 thin slices tomatoe
Preparation
Step 1
Arrange half of the cucumbers in a 9 inch pie plate. Top with half the onion. Repeat.
Combine vinegar and other ingredients in a small saucepan. Bring to a boil and cook for 1 minute or until sugar dissoves. Pour hot mixture over the cucumbers. Cover and marinate in fridge for 1 to 4 days. Arrange tomatoes on plate, cover with cucumbers and onions that have been drained.
