Chicken or Turkey Gravy

Ingredients

  • Drippings from pan to make 1/2 c of liquid
  • 1 c defatted chicken or turkey stock
  • 2 heaping tablespoons cornstarch
  • 2 T flour
  • 1/2 c cool chicken stock

Preparation

Step 1

Pour 1 c defatted poultry stock in a nonstick pan and heat over medium heat. In a small bowl. In a small bowl blend the flour and cornstarch and mix, whisking well with the half cup of cool stock. Add the cornstarch mixture to the pan, and stir or whisk continually as it cools. You can also use ½ c evaporated skim milk for the ½ c stock.
