Ingredients

  • 1 Large eggplant, peeled and cut into 1/2 inch cubes (about 1 1/2 lbs)
  • 2 Medium zucchini, cut into 1/2 inch cubes
  • 1 Green or red bell pepper, seeded and cut into 1/2 inch pieces
  • 1 Large yellow onion, chopped
  • 4 Cloves garlic, minced
  • 1 Jar (about 24oz) marinara sauce
  • 2 Cans (about 14oz each) diced tomatoes with garlic and onions, undrained
  • 1 Can (6oz) pitted black olives, drained
  • 1 Package (8oz) ziti noodles
  • Lemon juice
  • Shredded parmesan cheese (optional)

Preparation

Step 1

Combine eggplant, zucchini, bell pepper, onion, garlic, marinara sauce and tomatoes with juice in slow cooker
Cover and cook on low for 4 1/2 hours
Stir in olives and pasta and cook 25 minutes more
Drizzle with lemon juice and sprinkle with parmesan cheese
