Ingredients
- 1 1/4 C sugar
- 1/8 tsp. salt
- 1/3 C flour
- 2 C fresh strawberries
- 2 C fresh rhubarb, cut in 1" pieces
- 2 T butter
- 1 T sugar / brown sugar
- pastry for 2-crust pie
Preparation
Step 1
Combine 1 1/4 C sugar, salt & flour. Arrange half the strawberries & rhubarb in a pastry lined 9" pie pan. Sprinkle with half the sugar mixture. Repeat with remaining fruit & sugar mixture. Dot with butter. Install top crust & flute edges to make high standing rim.. Bush top of pie with cold water & sprinkle on 1 T sugar / brown sugar. Cut steam vents in top crust. Bake in hot oven (425°) 40-50 minutes or until rhubarb is tender & crust is browned.
