One Bite Green Bean Casserole

Ingredients

  • 1 lb fresh green beans
  • 1 T vegetable oil
  • 1 c chopped onion
  • 2 cloves garlic, minced
  • 2 T butter
  • 2 T all-purpose flour
  • 1.5 c milk, heated
  • 1/2 c heavy cream, heated
  • 1/4 t cayenne pepper
  • 1 t salt
  • 1/2 c shredded white cheddar cheese
  • 1 14oz package piecrusts (2 crusts)
  • 1 c french fried onions (such as French's), crushed

Preparation

Step 1

1. Preheat oven to 350F & spray mini muffin tins w/cooking spray.
2. Boil a lg pot of salt water.
3. Fill a lg bowl w/ice water.
4. Chop trimmed green beans to 1/2" pieces.
5. Boil green beans in water, strain & add to ice water.
6. In a lg saute pan, heat oil.
7. Add onions & garlic, & cook until soft, about 5 min.
8. Strain beans, add to pan & cook for 1 min.
9. In a med pan, melt butter.
10. Slowly whisk in flour & cook for 2 min while stirring.
11. Whisk in milk & cream, & stir as sauce thickens.
12. Remove from heat. Add cayenne, salt & cheese.
13. Stir sauce w/green beans until combined.
14. Roll out piecrusts & cut to fit the mini muffin tin.
15. Place crusts into muffin cups.
16. Spoon mixture into cups to the top of the crust.
17. Bake mini pies for 20 min.
18. Top w/crushed fried onions & bake for an additional 5 min.
