Ingredients
- 3 tsp. olive oil
- 2 links fresh chorizo (5-6), removed from casing
- 2 ribs celery, chopped
- 1 med. onion, chopped
- 1 tsp. minced garlic
- 1/2 tsp. cinnamon
- 1/2 tsp. cumin
- 1/4 tsp. nutmeg
- 1/2 c. dry white wine
- 2 apples, peeled and cut into 1/2" cubes
- 2 lb. sweet potatoes, peeled and cubed
- 3 c. chicken stock
- 1/4 c. half-and-half
Preparation
Step 1
1. Heat 1 tsp. of the oil in large skillet over medium heat. Add chorizo and cook, breaking up lumps with spoon, until golden brown, about 4 minutes. Drain on paper towels. Chill.
