Cranberry-Orange Glazed Turkey

Ingredients

  • 1 11 pound turkey, cut into pieces
  • 2 tbs EVOO
  • 1 1/2 tsp kosher salt
  • 3/4 tsp fresh ground pepper
  • Cranberry-Orange Glaze
  • 1 cup low sodium chicken broth
  • Assorted fresh herb sprigs, orange wedges and whole cranberries (for garnish)

Preparation

Step 1

1. Cranberry-Orange Glaze:
-1/2 cup frozen cranberry juice cocktail concentrate thawed
-1/2 cup frozen OJ concentrated thawed
-1/4 cup orange marmalade
-1 1/4 tsp chopped rosemary
- 1 tbs butter
- 1/4 tsp kosher salt
-1/8 tsp ground pepper
In a small saucepan bring juices, marmalade and rosemary to a boil over medium high heat. Boil until glaze thickens enough to coat spoon, whisking often - 15 minutes. Remove from heat. Whisk in the butter, then season the glaze with salt and pepper. Should get a 1/4 cup
2.Heat oven 400. Position rack at lower third of oven
2. rinse turkey pieces and pat very dry with paper towel. Brush turkey parts with oil and sprinkle with salt and pepper
3. Arrange turkey with skin side up on a baking sheet with the thick ends of the breast and thighs at the corners, the drumsticks in the center. Roast for 70 minutes
4. Remove turkey from the oven and brush with Cranberry-orange glaze and let rest for 30 min.
